This is my favorite filling and wholesome vegan lunch! I feel better after eating it, not groggy after some meat based meals.

It’s super easy. I heat my pan, add oil and my favorite curry spices that I have on hand (turmeric, Garamond masala, etc.). I add some tomato paste or sauce. Then I add my air fryer tofu and frozen veggies. I also add whole fat coconut milk so it takes on a creamy texture. Add fresh spinach, cilantro, and hot sauce if you like!

This is healthy and tofu is cheaper than most meat products!
